Our chef will be creating new dishes that are easy to make. Of course, the main ingredient will be wine. Bon Appetit!

                  White Wine Risotto   

                An Original Tuscan Sky Recipe

 

Risotto with Sun Dried Tomato and Irish Cheddar with Italian Truffle Cheese

 

Here are the ingredients used. You may substitute most anything similar.

Two cups white rice of any kind. 1/4 cup fragrant rice pilaf. We used Sun West’s Jasmine Medley. The medley is primarily for the visual contrast. Wild rice would do as well.

4 cups water or broth. We used water with some chicken broth for flavor.

Three tablespoons extra virgin olive oil (any oil will do) but olive oil is the best for taste and health.

1 small yellow onion. Any onion will do including shallots,or dried onions re hydrated.

1/4 to 1/2 cup sun dried tomatoes or the kind stored in oil. We used dried. We used 1/4 cup. Chop to the size you like. We chopped coarsely.

1 /2 to one cup of white wine. We used San Juan Winery’s Girls are Meaner for this batch. It is a Gewurztrminer wine. Sweeter wines work best but dry is OK.

1/2 cup Irish cheddar with Italian truffle. You can substitute any really sharp white cheddar but this Irish cheddar is excellent. 1/2 cup any mozzarella or similar cheese.

Directions:

We use a pressure cooker so the risotto only takes ten minutes. We have a Fangor brand cooker. Any brand will work.

Place onion chopped coarsely into the cooker and pour in olive oil. Saute on high until onion is softened a bit. About one minute.

Pour in wine to deglaze a bit then add water. Stir.

Add dried tomatoes. Stir.

Add rice… both types… stir again.

Close up cooker, pressure cook on high for seven minutes. ( timer starts once the cooker’s pressure tab pops.)
After seven minutes let pot cool down till the pressure indicator drops down.

Open cooker, throw in cheeses and stir into rice.

Done. Serve when ready. About 15 minutes total depending on how long your cooker takes to get up to boiling.
